Frozen Coconut-Pineapple Limeade

TKB - Coconut-Pineapple Limeade

If I were not 39 weeks pregnant, and if it had not been hovering in the high 80’s – 90’s all week until last night’s thunderstorm, I might be showing up at the table with something a little more substantial – another colorful salad, or perhaps one of the dishes I’ve been working on with spring produce from our CSA. But as it stands, nothing sounds better than a frozen drink. The kids couldn’t drink theirs fast enough, and my husband assures me this is even better with rum. I hid what little was left in the blender after serving everyone else, so I could have two glasses. Only six more days of being able to blame such behavior on the pregnancy.

Banana-Nut Smoothie (AKA Monkey Smoothie)

tkb-banana-nut-smoothie

Let’s mark the only recent memory I have of 60-degree weather in February (in Michigan!) with a smoothie. We often go the green smoothie route, but this one packs a protein punch and tastes kind of like banana ice cream.

I’m almost 23 weeks along, which means I’m eating all. the. time. Sadly, I’m not taking many pictures of said food before I inhale it. I’ll try to be better about that for your sake. In the meantime, I highly recommend making this nutritious treat!

Banana-Nut Smoothie
3 frozen bananas, chopped into pieces for easier blending
6 tablespoons natural almond or peanut butter
2 tablespoons chia seeds
2 tablespoons hemp seeds
2 dates, pitted
1/4 teaspoon vanilla extract
pinch sea salt
2 cups almond milk

Wishing you sunshine, wherever you are.

Happy New Year! Ah, the promise of a fresh start. I love turning the page to a new year, even if only in my mind. There’s something about it that leads to new possibilities, that somehow didn’t exist in December. I realize that’s not exactly logical, but January 1 always holds promise. Perhaps this will be the year I *finally* feel organized, or accomplish some other lifestyle goal. Maybe I’ll travel to new places I really want to visit, like Oregon and Italy. Some of you may be lucky enough to currently feel the sun on your face in the tropics. For the rest of us, we can start the new year on a delicious foot and live vicariously through this smoothie.

Blueberry-Coconut Smoothie

The Kitchen Beet - Blueberry Smoothie

You guys have been really, truly making my day. I mean it. One of my co-workers stopped by my office this morning to report her girls loved the cacao-coconut power balls (and they agreed with Aidan – better without the dried cherries). Another co-worker said she can barely boil water, but made the kale-red pepper-mushroom quiche to such success she felt like a kitchen warrior. A friend who now lives out west texted me pictures of the mango-sesame tofu spring rolls she made over the weekend, and mentioned multiple success with the granola, too. This literally makes me so happy, I can hardly put it into words. So thank you for every time you tell me you made a recipe from this site and loved it. I can tell you right now that will never get old!

The Cacao-Banana-Hemp Smoothie

I’m back in Michigan, where I live, after an amazing weekend in Vermont. As much as I truly love my life here with my family, my heart definitely has a little wanderlust. I love to explore new places, hike unfamiliarĀ trails and eat at local restaurants in cities not my own. My dear girlfriend from college and I met in Burlington to do exactly these things.
